I cook my steaks on the grill burning piňon wood which gives them wonderful aroma. I first marinade the meat for 2-3 days and then cook it. I estimate when the steaks are done by simply cutting into the meat.

I read a recipe about how to cook a steak in the oven. The meat should be porterhouse or rib eye steak from 1-2 inches thick. You preheat the oven to 450 degrees and also preheat on the top stove a dry skillet until it’s very hot. The salted and peppered meat is seared on the dry skillet for 2-3 minutes on each side until it has dark crust. Then you place the skillet in the preheated oven for about 14 minutes. The steak is done when you press your finger against the meat and it yields to the the touch. If you pierce the meat with thermometer to make sure it reads 120 degrees the juice may run out.

After cooking the steak should be allowed to rest 5 minutes before cutting and serving.
